Onion bajji recipe

Ingredients

  • 2 medium onions, peeled and sliced
  • Besan flour, 1/2 cup
  • a quarter cup rice flour
  • 1/2 teaspoon kashmiri red chilli powder
  • 1/4 teaspoon ajwain a pinch baking soda
  • deep-frying oil
  • water as needed (I added slightly more than a third of a cup)
  • season with salt to taste

Instructions

  1. Measure the rice and besan flour into a mixing dish. Mix in the ajwain, red chilli powder, and salt. Mix in the baking soda.
  2. Now, remove the skin off the onions. shave them It should be a little thicker. 
  3. Mix the flours thoroughly, then gradually add the water. Continue to combine.
  4. Mix with a whisk to ensure that there are no lumps. If the batter is too runny, the onions will not be coated. If you dip your finger within and take it out, the batter should coat well and be able to stand on its own. Dip the onions in the batter now.
  5. Dip it thoroughly so that the batter coated both sides. Heat the oil in a kadai until it is hot enough to drop it in. Fry in the deep fryer.
  6. Repeat with the remaining onions and batter. Cook until golden brown on the other side. Remove from the oil and drain on a piece of tissue paper. Serve immediately with coconut chutney!

Notes

  • For color and to make the bajjis less spicy, I added kashmiri red chili powder. You can also use regular red chili powder.
  • The consistency of the batter is critical for perfectly puffed out crispy bajjis, so add water as needed.
  • If the batter gets runny due to too much water, add a bit more besan flour and mix.
  • Always cook the bajjis on medium heat, flipping frequently to prevent them from burning. Make use of a high-quality besan variety.

HOW TO MAKE CHILLI KOTHU PAROTTA

Ingredients

  • Fresh Parotta – 5 
  • Onions – 6, 
  • large thinly sliced
  • Tomatoes – 2 finely chopped
  • 2 chopped bell peppers/capsicums (I used coloured ones)
  • Green chilies – 3 finely chopped
  • 1 tbsp ginger garlic paste
  • 1 tbsp chilli powder
  • 12 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 3/4 teaspoon garam masala powder
  • 1/2 teaspoon pepper powder
  • 4 tbsp oil
  • 2 tbsp salt
  • 1 cup curry
  • [To garnish:]
  • 2 tbsp coriander leaves
  • 1 teaspoon garam masala
  • 1 tbsp lemon juice

Instructions

  1. Cut the parotta into pieces or rip it into pieces as shown in the photographs.
  2. Heat the oil over medium heat, then add the onions and cook for a few minutes.
  3. When the onions begin to turn golden brown, add the chilies and ginger garlic paste and continue to simmer for a few minutes.
  4. Now add the tomato, bell pepper, and turmeric powder and sauté until the raw scent of the tomato has gone and it has turned mushy.
  5. Sauté till the raw smell goes away, then add the chilli powder, coriander powder, garam masala, pepper powder, and salt.
  6. Mix in the chopped parotta until nicely combined.
  7. Now add the curry and combine thoroughly.
  8. Now is the time to mince the ingredients, so use the sharp edge of a flat spatula or a stainless steel bowl. Keep in mind that the ends should be crisp. Use the end of a flat spatula to pound it and mince it.
  9. Cook for 3-4 minutes over medium heat, tossing the contents well.
  10. Mix in the chopped coriander leaves, garam masala, and lemon juice. Turn off the flame.

Notes

  1. Once the parotta is added, cook or work rapidly to finish the dish so that the parotta is fluffy and tender.
  2. You can use any curry for this recipe; for chicken kothu parotta, combine chicken curry and egg.

WHAT ARE THE SIX TYPES OF REAL PROPERTY

Milagai Bajji Recipe

Ingredients of Milagai Bajji

  • 12 medium green chilies
  • gramme flour, 2 cup (besan)
  • 3 tsp baking soda water as needed
  • 1/2 tablespoon cumin powder refined oil as needed salt to taste
  • 4 teaspoon cayenne pepper powder
  • 1 teaspoon asafoetida
  • 1 and 1/2 cup rice flour

How to Make Milagai Bajji

Step 1

To starting this dish, thoroughly wash the green chilies. After washing, chop the chilies down the middle and remove the seeds.

Step 2 

Next, combine gramme flour, rice flour, baking soda, chili powder, cumin powder, asafoetida, and salt in a mixing dish. Prepare a batter by adding some water. The mixture should be thoroughly whisked. Your batter is now complete!

Step 3

In the meantime, heat the oil in a deep frying pan over medium heat. Now, take the chiles and coat them thoroughly with the batter before dipping them in the frying pan. Continue to fry until they are golden brown in color.

Step 4

When the bajjis are crispy, remove them from the heat and place them on absorbent paper. Serve with tea or green chutney!

How to Make Thaen Mittai Recipe

Ingredients

  • 1 cup parboiled rice
  • 1/4 cup urad dal
  • 1 cup sugar
  • 1 cup of water
  • 4 drops lemon juice
  • 1/4 teaspoon baking soda
  • Food Color Orange
  • frying oil

Method

  1. 1 cup parboiled rice, 1/4 cup urad dal, washed and soaked for 3 hours in a bowl
  2. After soaking, mash them into a smooth paste with a small amount of water.
  3. In a mixing bowl, combine the ground batter with the orange food coloring and well mix.
  4. Then stir in 1/4 teaspoon baking soda and set aside.
  5. To prepare the sugar syrup, combine 1 cup water and 1 cup sugar in a saucepan and bring to a boil, stirring constantly until the sugar dissolves completely.
  6. Now, add 4 drops of lemon juice to it and set aside the sugar syrup.
  7. Let’s use the batter to fry the balls.
  8. Heat some oil in a pan, then create little balls of batter and put them one at a time into the hot oil. Fry the balls until crispy, then take them from the oil and place them in the sugar syrup.
  9. Allow the sugar syrup to soak the balls for 10 minutes.
  10. Now, in a blender, turn 1/4 cup of sugar into a fine powder, and roll the soaked sugar candies in the sugar to coat them. This step is optional.
  11. Roll the moistened candies in the sugar one at a time.
  12. Thaen mittai, or sugar candy, is now ready for consumption.

Chettinad Style Boondi Laddu

Measurements

1 cup equals 250ml, 1 tbsp equals 15ml, and 1 tsp equals 5ml.

Ingredients

  • 2 cup Gram Flour
  • 1/4 cup sugar
  • 1 tablespoon Ghee
  • 10 to 12 cashews
  • 2–3 tablespoons Raisins
  • 1/4 teaspoon cardamom powder
  • a generous pinch of baking soda
  • 2 tbsp Yellow Food Color
  • Edible Camphor in a mustard size is optional.
  • two cloves
  • As needed, water

Instructions

  1. Combine gramme flour, yellow food coloring, and baking soda in a mixing dish. Everything should be thoroughly combined.
  2. Pour in the water a bit at a time, stirring constantly, until the batter is thick but runny.
  3. Heat the oil in a pan for deep frying the boondi. Place the boondi ladle at a height over the heated oil. Pour one laddle of batter over the boondi ladle. Make a circular motion with another ladle on the batter, as if making a dosa. Even the smallest boondi will tumble into the oil.
  4. Don’t crowd the oil. Tails will form on the boondi if the batter is too thick. The boondi will be flat if the batter is runny. As a result, ensure that it is of the proper consistency.
  5. Fry the boondi for about a minute. It should not crisp up. It is sufficient if the boondi is cooked. It must remain pliable. Using a slotted spoon, remove the fish and drain on tissue paper.
  6. Repeat with the remaining batter. After each or every other round, wipe the back of the boondi ladle to get an even-sized boondi.
  7. Make the sugar syrup now. Add water to a pan with sugar until the sugar is completely submerged. I used around one cup of water.
  8. The sugar syrup will bubble and thicken in 5-7 minutes on medium heat.
  9. Check to see if the sugar syrup has a string consistency. A noticeable string should form if you swipe the back of the ladle and contact the syrup with your index and thumb fingers. We’re hoping for two-string consistency within 3-4 minutes of the one-string consistency.
  10. Turn off the heat and stir in the cardamom powder. Add the edible camphor if using. Only use one mustard-sized amount as it might be overpowering.
  11. Pour the sugar syrup over all of the prepared boondi
  12. Mix thoroughly and set aside until warm enough to handle.
  13. Meanwhile, cook the cashews, raisins, and cloves in ghee before adding them to the boondi.
  14. You can make laddus once the mixture is warm enough. Take a fistful of boondi and gently press it to make ladoos. Rep with the remaining boondhi.
  15. These should be kept in an airtight container. Should keep for 5-7 days.

  • ten cloves smashed garlic
  • 1 chopped onion
  • 1 tablespoon cumin seeds (Jeera)
  • 2 tsp ground black pepper
  • a quarter cup curry leaves
  • Season with salt to taste
  • 1/2 tsp turmeric powder (Haldi)
  • 2 teaspoons ginseng oil

How to make Attukal Soup Recipe | Paya Soup

  1. To make Attukal Soup Recipe | Paya Soup, first wash the goat leg in warm water, then drain and set aside.
  2. In a large pressure cooker, sauté the goat leg pieces and onions with 2 teaspoons gingelly oil and turmeric.
  3. In the mixer jar, combine the garlic, curry leaves, black pepper, and jeera to make a fine paste. It used to be pounded with a huge pestle rock.
  4. Add 1 litre of water to the sautéed goat leg pieces and this ground paste.
  5. Once it begins to boil, season with salt and simmer for about 15 minutes, or until softened and cooked.
  6. Allow it to come back to a rolling boil a number of times after the steam has been released on its own.
